Watermelon Steaks

This is one of my favorite recipes I’ve ever made! It’s easy, creative and unexpected. I really love seeing people’s reactions to giving this a try! It’s getting to be watermelon season, and with BBQ’s in full swing this cruelty-free alternative to regular steak will knock the socks off all your friends. Although it is cooked up like steak it has more of a poke kind of vibe. Savory, delicious and refreshing on a hot day! Eat it on a plate with a bunch of tasty sides or throw it atop a poke bowl. Try it out and let me know what you think!

Lion’s Mane Mushroom Steaks

This is definitely my FAVORITE way to cook a good ole’ lion’s mane mushroom! Love mushrooms but not always a fan of the texture? This method will ensure they’re meaty, flavorful, tender, and the best substitute to eating dead animal flesh. It’s very easy to keep animals off your plate when you can find tasty and wholesome alternatives! Lions Mane Mushrooms also have plenty of research proven medicinal benefits that revolve around brain health.. including improved memory, protection against dementia and Alzheimer’s, regeneration of brain cells, relief for mild depression and anxiety symptoms, plus aiding in the healing of nervous system related injuries. What are you waiting for, go grab some lion’s mane and let’s get cooking!

Vegan Pumpkin Cheese Fondue

I whipped up this recipe for a Halloween get together we hosted for a small group of friends last night, filled with spooky stories, vegan eats and good company. We used to host large scale potlucks at our home regularly before the pandemic hit, and this was our very first time getting back into hosting any sort of party after we’ve become a bit too comfortable with our introvert lifestyle. If you remember our big potlucks from back in the day - do not worry, because they’re comin’ back soon! If you’d like to be included in the next one let us know - we plan to have them open for all of our vegan (and aspiring vegan!) friends 😊

Homemade electrolyte drink (aka, “Gatorade”)

Sicknesses are going around and it’s more important than ever to stay hydrated. As someone who has been avoiding processed sugars for a long time now (they trigger migraines amongst other things for me), it’s shocking to me that doctors are actually recommending sports drinks like Gatorade that are literally filled with processed sugar, dyes, and “natural flavors” amongst other things. They may have electrolytes and supposedly be helpful for hydration but those processed sugars and additives have other negative effects on the body and how you mentally feel - so I’ve come up with a simple, cheap, and healthy homemade alternative to make at home when you’re sick or need a boost after strenuous physical activity! This is perfect for anyone on any diet as it is clean, raw vegan, with minimal ingredients- but it sure does the job in hydrating and making you feel better!

Watermelon Poke Bowl with Homemade Sriracha Mayo Dressing

Before I went vegan, I used to really enjoy eating fish sushi and ahi tuna bowls. Since I went vegan almost 8 years ago, fish is one of those foods I still occasionally miss - specifically sushi grade tuna and salmon. When we were out in California (more info on that coming soon — in the next parts of my road trip blog I still have to finish writing!) I fell in love with a watermelon poke bowl from Joi Cafe in Ventura County. Considering that watermelon is one of my favorite foods PERIOD… (and that I also dabble in being a part time fruitarian) I knew this was a recipe I wanted to try making at home. It may sound a little odd until you try it.. but if you like watermelon and like poke bowls, this is guaranteed to become your new favorite meal.

Vegan Ravioli

Here's the perfect easy recipe for homemade vegan raviolis! If you're like me and raviolis were once a staple food for you before you made the change to go vegan.. or perhaps you're looking for dairy-free recipes and substitutes for cheese but love Italian foods and cannot live without the combination of pasta, cheese and sauce (that's me!). Whatever your reason for wanting to give these a try, these raviolis are simple and fun to make, and you can stuff them with just about anything! I kept it simple here, filling them with cashew cheese and some kale. I made the cheese from scratch but you can use store-bought vegan cheese to save some time, or even include seitan and plant-based meat substitutes or other veggie combos for unique flavors and varieties. Have fun, and if you make these let me know how they turned out! Recipe was modified from Pastabased.com.

Raw Vegan Caramel Chocolate Fudge Bites

Umm... so this is one of the most amazing raw desserts I've ever made! A chewy "caramel" center that really tastes like caramel candy surrounded by a rich chocolate coating. These are similar to "Rolo" candies if you know what I'm talking about.. except they're tastier, fancier, and made from all natural ingredients. Completely vegan, gluten-free, wholesome and raw, everyone can enjoy this recipe and it will be sure to wow your friends! Ideas for this recipe were inspired by my vegan food idols Angela Liddon and Laura Miller.

Easy roasted leeks

We have had a lot of fresh leeks on hand that needed to be cooked and I couldn't decide what to do with them! I used some in various recipes this week but wanted to enjoy the sweet and enjoyable flavor of the leeks on their own by roasting them. After making some in thin round slices for several meals, I decided to try slicing them longways to keep them moist and tender as opposed to dried out and crispy. With nothing but a little oil, this recipe is the perfect side dish to compliment any meal that you're already baking in the oven anyway to conserve energy :)

Leek and Onion Frittata (vegan and gluten-free)

This delicious leek and onion frittata was the perfect thing to make tonight. It's rainy and cold out, so it was a great day to have the oven on... and we happen to have a ton of leeks and onions on hand. This frittata recipe can easily be modified to include other veggies you have on hand too.. feel free to experiment! The recipe is plant-based/vegan and gluten-free. This recipe was taken from Vancouver with Love.

Flourless Peanut Butter & Smores Cookies (vegan & gluten-free)

This recipe is so good and so easy! These chewy, soft, delicious, gluten-free and vegan cookies are the perfect thing to make to wow your friends! I used a recipe for flourless peanut butter cookies from Angela Liddon's second "Oh She Glows" cookbook and got creative to modify them into smores cookies. Simple, quick, and delicious!

Vegan Chik'n

This meat-free loaf definitely tastes a lot like chicken, but the best part is it's completely animal free. I have experimented with several seitan recipes over the years, as seitan is a very meat-like vegan protein (and by protein-- it has a TON of protein in it!) and has the realistic dense texture of meat unlike some other other faux-meat recipes that are good but taste more like veggies than "meat". This being said- I'm not a meat eater and I hate meat, but I think having a similar texture or familiarity to traditional meat is important for people that do want something meaty and are looking to find a plant-based substitute they can relate to and enjoy. One thing I generally am not crazy about when it comes to typical seitan is the really dense and heaviness of it from all the wheat gluten, so I've been trying to find an alternative that's lighter and more tender but isn't gross or too spongy. So far, this recipe is the best I've made and it really tastes like a super tender chicken breast and has the versatility to do just about anything with it as you would with real chicken.
