NOT Tuna Salad Spread - Vegan

This quick and easy raw sunflower seed spread is the perfect tuna subtitute to enjoy in a sandwich, on some toast, with crackers, or even over a bagel. Simply blend the ingredients together in a food processor - and in an instant you have a plant-based and protein packed alternative for tuna salad. Enjoy!




 I throw this together without measuring and I make it slightly different every time, so feel free to experiment and adjust ingredient amounts to your liking. Also tastes great topped with tomatoes or other veggies!


Ingredients:

1 1/2 - 2 cups sunflowers seeds (preferably pre-soaked overnight, but if not, just go with it)
1-2 teaspoons sea salt
1 teaspoon garlic powder or fresh garlic
1/4 cup lemon juice, add more if needed
1/4 - 1/2 cup plain vegan yogurt, or water to help everything stick together (will need a little more liquid to blend if your seeds were not soaked)
optional - add celery/onion slices or veggies like you might add in a tuna salad

Directions:

Blend together until smooth. The mixture may never get completely smooth in texture depending on your food processor, but you just want some of the seeds to be broken up and mushed together the best you can. Feel free to adjust the ratios and add other spices in as you'd like. There are no rules, the goal is just to get a tasty mixture you'll enjoy!
