easiest and best vegan mac n cheese

This recipe is simple, quick, delicious and tastes so similar to real mac n cheese but even better! Dairy-free but just as cheesy as ever.. this simple recipe can be made at home and easily modified to be gluten free as well. Enjoy and let me know what you think!

Ingredients:

3 cups of unsweetened plant-based milk (soy, almond, coconut, flax, cashew, etc. etc.)
1 teaspoon miso paste
salt and garlic powder to taste
1 teaspoon turmeric powder or fresh grated turmeric
8 ounces dry pasta (for a gluten-free variety, try the quinoa and rice pasta from Trader Joe's)
1 can of coconut cream
1 tablespoon of tapioca powder
1 tablespoon lemon juice
1/2 cup nutritional yeast

Directions:

Add milk to a large cooking pot and bring to a boil on the stovetop. Add miso paste, turmeric, salt and garlic powder and mix well.

Add dry pasta and cook for 8-10 minutes until soft. Add coconut cream (both the thick part and watery part from the can). Keep mixing and lower heat. Sprinkle in the tapioca powder carefully, a little at a time and mix well to try to prevent it from clumping up. Once it's mixed in your liquid should start to thicken.

Add lemon juice and nutritional yeast. Keep stirring until well combined. Taste test the cheesy sauce and adjust seasonings if necessary (add salt if needed and add lemon juice if it needs more tartness). It should taste super similar to regular mac and cheese!

Optional add-ins include kale, spinach, broccoli, or other veggies to make it a more balanced meal. I personally love adding chopped collards in whenever I can! You can also top it off with a shredded store bought vegan cheese or even mix in some tempeh bacon!
