Buffalo Tempeh Sticks

This recipe is seriously SO easy. It's the perfect thing if you're looking for some comfort food, need something to bring to a potluck or just really don't want to put a lot of effort into cooking but are sick of eating frozen veggie burgers.




Ingredients:

~1 block of tempeh, either fresh or frozen
~Buffalo sauce (most are vegan, check ingredients to make sure there's no butter or dairy)
~Vegan Ranch (SO many accessible brands now available including Follow Your Heart and Trader Joe's!)

Directions:

Preheat your oven to 400 degrees (or if using toaster oven, I use the "toast" or 450 degrees setting)

If your tempeh is frozen, break it into 4 square chunks. You'll basically begin the cooking process but let it thaw while it cooks. If it's fresh and doesn't need to thaw, cut your portions into even rectangles, or "sticks", roughly the size of typical mozzarella sticks or chicken fingers

Cover a cookie sheet with foil and place your frozen or fresh chunks on there. If fresh, coat each "stick" with buffalo sauce on each side, and if frozen, just put a dollop of sauce on top of each square. Bake at 400 degrees for about 10-12 minutes.

Flip each piece over. If they were frozen, add more sauce on the other side after you flip, and gently cut the thawed blocks into rectangles. Make sure each is pretty well coated in buffalo sauce. Bake for another 10 minutes or so.

If they were fresh to start with, they should be finished now. Keep an eye on them to make sure they do not burn, if they start looking dark you can take them out early. If they were frozen to begin with, flip each stick one last time, and bake for another 10 minutes. Add buffalo sauce if needed as they'll start to soak some of it up. They should cook for a total of 30 minutes.

Allow to cool and serve up with a side of RANCH dressing. Add some carrots and celery stalks if you wish. SO GOOD!
