Vegan Nachos!

One of my all time favorite recipes. Brings me back to the days of eating crappy nacho chips with that fake orange cheese all over them.. but this recipe is WAY healthier for you, packed with protein and packed with flavors. You won't be able to stop eating it!




Ingredients:

1 bag of tortilla chips

Refried beans, or simple canned beans (I used a can each of pinto and black beans, both rinsed and drained)

taco and burrito fill- try "nutty" taco meat, or TVP taco/burrito fill

cheese sauce

quick guac

vegan sour cream

salsa, I used a combo of pineapple salsa from Trader Joe's and Verde salsa too

½ cup green onion stalks chipped

½ cup fresh tomatoes


Directions:

Place a ring of tortilla chips on a large plate leaving a space in the venter. Spoon beans into the center, and top with cheese sauce. Load on some taco/burrito fill and cover with more cheese. Top that with salsa, guac, sour cream, green onions and tomatoes MMMMMMMM delicious!
