Delicious vegan meaty-tasting filling for tacos and burritos, taken from "Hot Damn & Hell Yeah, The Dirty South Cookbook".
Ingredients:
1 cup TVP
1 cup boiling water
1 tablespoon vegetable oil
1 chopped onion
2 cloves of garlic
1 red or green bell pepper, chopped
1 can of tomatoes, chopped or diced
1 teaspoon paprika
2 teaspoons chili powder
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon salt
⅛ teaspoon black pepper
⅛ teaspoon cayenne pepper
½ teaspoon oregano
Directions:
Combine TVP with 1 cup of the boiling water in a bowl and set aside.
IN a skillet over medium-high heat, sauté onion and garlic in oil for a few minutes, then add bell pepper and continue to sauté. Add remaining ingredients, including rehydrated TVP and remaining cup of water. Bring mixture to a boil and keep mixing.
Reduce heat and allow to simmer uncovered for 20-30 minutes, stirring occasionally until it becomes thick and flavorful. Serve in taco shells, burritos, enchiladas or over nachos!
