Vegan cheese sauce

This sauce is my favorite in nachos, enchiladas or tacos but also can go on pasta, veggies, rice, or whatever else you may want a cheesy sauce for. It's so tasty and reminds me of the artificial cheeses that make mac n' cheese or nachos so delicious except it's vegan and it's not nearly as bad for you (and won't leave you feeling crappy afterwards.. unless you just eat too much of it)! Recipe taken from the "Hot Damn and Hell Yeah Dirty South Cookbook".

Ingredients:

⅓ cup nutritional yeast
½ cup flour
1 tablespoon onion powder
⅛ teaspoon turmeric
⅛ teaspoon pepper
6 tablespoons olive oil
2 teaspoons mustard
2 teaspoons salt
½ cup ketchup
1 ¾ cup water

Directions:

Blend all ingredients together in a saucepan over medium heat. Whisk until the mixture thickens to your liking.

To reheat, add some water and stir over low heat.
