These chocolatey cookies will blow your mind. Beans? Cookies? Never thought they would mix but they certainly do. Not only do they taste amazing but they're vegan and gluten free too! I refrigerated our leftover cookies and when eating them later they tasted like straight up fudge. Delicious!!!! So great on their own or topped with some vanilla soy ice cream :) I got this incredible recipe from Vegan Does It.
Ingredients:
1 cup of black beans
½ cup or about 6 pitted dates
½ cup cocoa/cacao powder
2 tablespoons of almond meal (I got mine from Trader Joes, you can also make some by grinding up almond in a food processor)
2 tablespoons coconut oil
2 tablespoons maple syrup
2 tablespoons almond milk
½ teaspoon vanilla extract
½ teaspoon baking powder
⅛ teaspoon salt
Directions:
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Soak dates in hot water for 10 minutes to soften. Drain and discard water.
In a food processor combine beans, dates, oil, strip, milk and vanilla until a smooth paste forms. Add cocoa, almond meal, baking powder and salt.
Spoon mixture by the tablespoon onto the baking sheet. Use the back of the spoon to flatten the tops of the cookies. Bake for 10-12 minutes and allow to cool before eating. (Do not over bake! They will look underdone but that's okay!) Enjoy!
