Power Pizza

This pizza is SOOOOO filling. Usually when it comes to pizza, I'll stuff my face until I'm about to throw up, but this had me full and satisfied halfway through. The benefits of it being on a healthy flat bread are that it's gluten free, packed with enough protein to get you through the whole day, and it's much easier to digest than most other types of dough or bread. Quick and easy, this crust is ready in a half hour so your whole pizza can be finished in under 40 minutes. How about that for a healthy, vegan, DELICIOUS pizza?




Ingredients (makes 2 filling servings):

1 batch of chia seed power bread to use as your "flat bread"

And feel free to mix and match (or get creative and add your own!) toppings from these suggestions!:

Marinara sauce (make sure it's vegan, no milk or cheese!)

Vegan cheese, such as Daiya cheese shreds, chao cheese slices, or other vegan processed cheese, OR try any of these wholesome/healthy homemade plant-based cheeses (carrot cheese, cashew ricotta, sunflower cheddar, pecan parmesan)

grilled or sautéed veggies such as onions, peppers and tomatoes with garlic

Fresh basil leaves

Olives

pineapples, sliced into small bite sized pieces

BBQ tempeh or tofu


Instructions:

Mix n bake your chia bread according to recipe. Once done, add marinara, cheese, veggies and other toppings of your choice and leave in oven after the oven is turned off so the heat will help your ingredients blend together/melt into your pizza for another 5-10 minutes.

Allow to cool and cut in half for 2 servings of flatbread. PACKED with protein just from the crust alone, this is a delicious and filling meal. Enjoy pizza without the guilt. ENJOY!
