Cashew Ricotta

A healthier alternative to ricotta cheese, this nut based "cheese" is creamy, tasty and packed with protein. Enjoy in recipes in place of ricotta cheese, added on toast, mixed with pasta, or with veggies and marinara sauce. This awesome recipe was taken from one of my favorite sites: The Simple Veganista.


Ingredients:

1 ½ cup of raw cashews, soaked for at least 2 hours (if you don't have time to soak, just add extra water to recipe, but the cheese comes out smoother if you soak ahead of time)

½ cup of water

juice of 1 large lemon or 1 tablespoon of apple cider vinegar

1-2 tablespoons of nutritional yeast

1 garlic clove

dash of onion powder

salt and pepper to taste

Ingredients:

Blend everything until smooth. Use in recipes as ricotta and enjoy!
