Strawberry Coconut Cream Smoothie

Nom nom.. this delicious and healthy dessert makes a complete breakfast, snack, or meal replacement. It's easy to make and heavenly delicious! It's hard to believe it's actually good for you! This recipe was taken from "The Ultimate Smoothie Book" by Cherie Calbom.



Ingredients:

½ cup of milk of choice (tastes great with coconut milk!)
5 ounces of silken tofu
⅓ cup of grated coconut
1 teaspoon of vanilla extract
8 fresh or frozen strawberries
3 medium sized dates without pits (soak in water first if hard)
6 ice cubes (if strawberries aren't frozen)

Directions:

Blend everything in a blender until smooth and enjoy!
