Healthy Passover Friendly Lasagna

Last year I posted a delicious matzo lasagna that is easy to make and delicious! I made it again this year but made it soy-free and added some healthy additions such as cashew ricotta and some fresh greens. For those that celebrate Passover and do not eat bread this week, here's a great way to have a wholesome delicious and plant based meal making the use of matzos!




Ingredients:

About 5 pieces of matzos (soaked in water for 1-2 minutes and removed)
about ½ jar of marinara sauce, more or less to taste
1 onion
bunch of hearty greens of choice (collards, kale, swiss chard) chopped
3 cloves of garlic
pinch of oregano
salt and pepper to taste
1 package of Daiya cheese shreds (or another dairy free cheese of choice)
cashew ricotta 

Directions

Preheat oven to 400 degrees F.

Saute onions and garlic until translucent and add greens. Add seasonings to taste. Mix well and cover until wilted.

In a casserole dish, layer your wet matzo, some sauce, the veggie mixture, the ricotta cheese, daiya, and then layer again with remaining ingredients. Bake for 30 minutes.
