Carrot Cheese

This stuff is so good and is ideally a great substitute for any kind of nacho cheese or cheese sauce topping. It's so creamy, heavenly, and RAW. Can be served cold or hot but the best part is it literally consists of blending a bunch of things together, and wallah, you're done! Thank you "Oh She Glows" which is the awesome cookbook this recipe was taken from (pulled from a life-affirming warm nacho dip recipe) YUM! If you've read through my blog you'll find several variations within different recipes--- I've made cashew cheese with miso, with soy sauce, with you name it.. even blue cheese varieties but this was the first batch with carrots and I LOVE it! There's only pure wholesome goodness in here (plus it's soy-free) and REALLY tasty!


Ingredients:

1 cup raw cashews (soaked 2 hours-overnight.. optional, at least when I don't have time I don't do it!)
1 cup peeled and chopped carrots
2 tablespoons nutritional yeast
2 tablespoons lemon juice
1 garlic clove
1 ¼ teaspoons sea salt
¾ teaspoon chili powder
½ teaspoon onion powder
¼-½ teaspoon cayenne pepper to taste

Blend all together. Tah-dah, you're done!
