Beet-utiful Power Glow (in juice or smoothie form)

This amazing recipe came from one of my current favorite cookbooks "Oh She Glows" which is amazing (and was a gift from on of our best friends!!) I was motivated to make this because we have a bunch of fresh beets from the farmers market and I'm looking for more things to do with them! This easy blend can be strained into a juice after, or left with the pulp for a thick fibrous and hearty smoothie. Enjoy :)




Ingredients:

1 seedless cucumber, peeled and chopped (OR you can substitute for another green, such as kale)
1 small-medium beet, peeled and chopped
1 carrot, peeled and chopped
1-2 tablespoons of lemon juice to taste
1 small apple cored and chopped

In a high speed blender combine everything together with ½ cup of water and blend until smooth.

Smoothie option: Enjoy as is, or add more water or some orange juice to thin it out a bit. Keeping all the pulp will make you feel full (so this will actually feel like a full meal and not just a drink) and add extra fiber. You can also add additional proteins or powders into your smoothie such as maca powder, nuts, seeds, etc. for an extra protein kick. I even added frozen strawberries to mine to make it taste colder and to sweeten up the beets a bit.

You'll taste a bit of that strong beet taste (slightly bitter) in the smoothie, but remember that this drink is entirely healthy and good for you.. how amazing it will make you feel is so worth that little beet kick in there!

Juice option: Strain through a straining bag (also commonly known as nut milk bags) or fine mesh sieve over a large jar or bowl. Squeeze the bag to release the juice, or if using a sieve, use a spoon to push out the juice. This will make your drink pulp free and uniform. Compost/discard the pulp and enjoy!
