Protein Power Goddess Bowl

This mix is a one pot recipe for a mixture of wholesome goodness. You've got your protein-packed lentils, greens, colorful veggies and a lemon-tahini goddess dressing all in the same meal. It will literally make you glow like a goddess. This delicious and unique recipe was modified from Angela Liddon's "Oh She Glows Cookbook".



Ingredients:

For dressing:
1/4 cup tahini
1 large garlic clove
1/2 cup fresh lemon juice
1/4 cup nutritional yeast
2-3 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
freshly ground black pepper to taste

For lentil-veggie mixture:

1 cup uncooked green lentils or a mix of green and black
1 cup uncooked spelt berries or wheat berries soaked overnight, OR 1 cup uncooked tricolored quinoa or brown rice
1 1/2 teaspoons olive oil
1 small red onion chopped
3 cloves of garlic, minced
1 red bell pepper or large carrot chopped
1 large tomato chopped
3 cups spinach or kale chopped
*any other veggies you love, throw them in there too!
1/2 cup parsley minced, optional

Directions:

Cook the lentils in a pressure cooker or boil in 3 cups of water for 20-25 minutes. Cook spelt berries in 1 1/2 cups of water for 35 minutes until soft. If using quinoa, or rice, boil in 1 1/2-2 cups water in a separate pot until soft (15 mins for quinoa, 40 for rice).

Make your tahini-goddess dressing by blending all the ingredients in a food processor until smooth. Put aside.

In a large skillet, heat olive oil to medium heat and add garlic and onion until onion is translucent.

Add pepper or carrots and tomato and sauté for 7-8 minutes.

Stir in your greens and cook until wilted. Stir in your cooked lentils, and other grains of choice, and tahini goddess dressing. Reduce heat to low, and simmer for a few minutes or until everything is soft and perfect. Remove from heat and stir in parsley if using.

Season with salt and pepper to taste. Enjoy!
