This delicious nut based cheese is a great substitute for dairy ricotta in most recipes. It tastes amazing on pizza, with pasta, in raw lasagnas and more. It's wholesome and healthy and packed with protein, without any animal products. Once your nuts have soaked it's also easy to whip up in about 2 minutes! This recipe was taken from "But I Could Never Go Vegan!" By Kristy Turner (a great book btw..)
Ingredients:
1 cup raw macadamia nuts, soaked in warm water for 1 hour (water reserved)
2 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon white miso
Directions:
Combine all ingredients and 4 teaspoons of reserved water in a food processor or blender until smooth. Taste and add more salt if needed.
