Delicious!!!!! Josh made these last night and I can't stop thinking about them. They're like little gourmet frozen treats that are actually pretty good for you but will leave you wanting more and more. If you love chocolate covered bananas, then these little bite sized treats are made for you. A great crowd pleaser to prepare for guests (plus they look pretty fancy too!). You can get creative and add other toppings on them too if you want. Recipe was taken from the Oh She Glows Cookbook (which I'm obsessed with by the way). Enjoy!
Ingredients:
2 Large bananas, peeled and sliced into ¾ inch wide pieces
3 tablespoons chunky almond, peanut, or sunflower butter
2 tablespoons dark chocolate
½ teaspoon coconut oil
1 tablespoon raw cacao nibs
2 teaspoons toasted sliced almonds (or sunflower seeds or other nuts of your choice!
Directions:
Line a plate with parchment paper. Place the sliced bananas on the paper. Spread about ½ teaspoon of nut/seed butter of your choice on top of each one (feel free to mix n match too-- that's what Josh did!)
Put the plate in the freezer to chill for at least 30 minutes so banana can firm up.
In a saucepan, melt the chocolate and oil together over low heat. Stir to combine. Drizzle chocolate on top of each banana piece.
Immediately sprinkle tops with cacao nibs and nut and seed toppings, and stick each one with a toothpick if you'd like for serving. Melted chocolate should quickly firm up on the cold bananas but if it doesn't, stick in freezer for another 5-10 minutes until hardened.
Serve immediately and store leftovers in the freezer. YUM!
