Vegan Avocado Fudge

This recipe is amazing because not only is it sweet, chocolatey, and just the perfect rich dessert to satisfy a craving but it contains AVOCADOS! Avocados are a delicious, creamy addition to many dessert recipes and are the secret to keeping this fudge really creamy and moist. This fudge is not only a more wholesome version but it's also dairy and gluten free. This recipe was taken from Nutritionicity.com.


Ingredients:

1 ripe avocado
1 cup vegan dark chocolate chips
1 1/2 teaspoons vanilla
1/2 cup coconut sugar, or organic cane sugar
1/4 cup non-dairy milk
1 tablespoon vegan butter (such as earth balance)


Instructions:

Peel, remove pit, and blend avocado in food processor or by hand until completely smooth.

In a medium bowl combine chocolate chips and 1 tsp of vanilla.

In a small saucepan, combine sugar and milk and whisk on medium heat until blended. Add vegan butter and continue whisking together until it begins to boil. Add blended avocado 1 tablespoon at a time and continue whisking until smooth. Add 1/2 tsp of vanilla and keep whisking.

Once well blended, pour hot mixture over chocolate chips/vanilla in mixing bowl. Mix by hand with a spoon until well incorporated and smooth (~ 5 minutes).

Pour batter into a 5" x5" sized pan, or into any kind of molds of your choice (we had a silicone ice cube tray that makes perfect square treats that we used). Cover and put tray into refrigerator and allow to set for 8 hours or until firm. Cut into small squares to serve.
