Chia seed pudding

This one is so easy! It does have to sit overnight to get thick and pudding-like... but 5 quick minutes (or less) of prep the night before will result in an effortless breakfast you'll be thankful for the next morning! Thank you Angela Liddon, author of "The Oh She Glows Cookbook" for this one!



Ingredients:

3 tablespoons chia seeds
1 cup non-dairy milk
½ teaspoon vanilla
½-3 tablespoons of maple syrup

Directions:

Whisk everything together in a bowl or tupperware with a lid. Store in refrigerator overnight.

In the morning layer/mix together with granola, and/or fresh fruit such as strawberries, blueberries or bananas and enjoy!

Yes, it kind of looks like frog eggs but I promise you'll enjoy it!
