Sweet Pesto Sauce

If you couldn't tell already.. I absolutely adore pesto. I have at least 3 different pesto sauce recipes posted on here, and this one is absolutely my favorite so far! The creation of this recipe was inspired by The Fat Tuscan Grill in Gainesville, FL.. where I have not yet eaten but who had a booth at a farmers market with pesto dip samples I tried once. Their pesto was to die for. It was vegan.. and slightly sweet! They of course wouldn't share the recipe but did tell me the chef's secret ingredient.. raisins! So I used that information as inspiration to put a spin on one of my other pesto recipes... and unfortunately I didn't measure things out, so adjust the ingredients to your liking, you can't really go wrong with making pesto! :)





Ingredients:


About 3 cups of fresh basil

A small handful of other herbs of your choice (optional).. I chose moringa, sage, parsley and cuban cilantro; all which I have growing in my garden

~ ½ cup sunflower seeds

~ ½ cup cashews

~ ½ cup nutritional yeast

~ ¼-½ cup cherry/grape tomatoes

~ ¼-½ cup plump raisins (I used a mix of tri-colored raisins from Trader Joe's!)

~ ¼ cup olive oil (add more as needed to thin out the sauce if it's too thick)

Dashes of garlic and salt



Directions:

Put everything into a food processor and blend blend blend until smooth :)
Enjoy as a dip, spread, or sauce!
