Amazing pesto

This pesto sauce was inspired by a basic vegan pesto recipe I found on onegreenplanet.org, but I used my creative license to change it and add a lot to it. This sauce is tasty, healthy and wholesome. It is unique and flavorful. It will keep your taste tester guessing what was in it but satisfied with its flavorful punch. This recipe was enough to just cover one package of whole grain spaghetti but it was spread a bit thin. If you like it thicker, I recommend doubling the recipe or making 50% more. It also makes a great dip, spread, or pizza sauce. Add some on top of a veggie burger or as a spread on a sandwich or some sprouted wheat toast. Enjoy!


Ingredients:

- 2-3 cups of fresh basil
- handful of assorted fresh herbs of your choice (optional); I used some parsley, cilantro, mint, and lemon balm from the garden but just a small handful total
- ¼ cup of nuts of your choice; pine nuts are expensive so I went with cashews
- handful of sunflower seeds (pumpkin seeds would work great too!) 
- ¾ cup of olive oil
- tablespoon of garlic
- ½-1 cup of nutritional yeast depending on how "cheesy" you like it
- dash of salt

Directions:

Blend all ingredients together in a food processor. Serve however you would like and enjoy! (Ideas include pasta sauce, pizza sauce, spread on a veggie sandwich or panini, topping on toast, dip for fresh veggies, pita, or chips or whatever! Try it with some sundried tomato too, yum!)
