This recipe is for a quick and simple raw and wholesome flavorful salad dressing. Got the idea from our good friend Sita, who also grows and sells superfoods here in Gainesville, FL.
Sita grows delicious wholesome greens such as sunflower and mung bean sprouts (along with moringa, yarrow, wheatgrass, and lots of other delicious plants). High in protein and nutrients, we love to add sprouts to all kinds of meals including salads, on top of veggie burgers, in curry, on soups, as a side meal, or just on their own. Sita recommended to us to try a very simple dressing over a big heaping serving of sprouts- and now I'm addicted. It's simple, just mix together tahini and apple cider vinegar. Two wholesome ingredients make a healthy dressing with a kick! I made a huge raw salad drizzled in this dressing, consisting of kale, Sita's sprouts, tomatoes, apples, avocado, hemp seeds, and pumpkin seeds. I've thrown it on a side salad of just kale and also tried it amongst sprouts alone. You can put it on any kind of salad, on sprouts, on veggies, or use as a dressing or dipping sauce for just about anything. Highly recommend! If you don't have tahini, just grind up some sesame seeds, add a little olive oil and lemon juice and enjoy! This salad was just so good and wholesome, it reminds me of the type of meal you'd get at one of those health food joints that only serve raw and vegan food <3
Ignore my side of blueberry bagel- that was an impulse that I traded in for this wholesome salad instead!
