Simple Vanilla Cake with Vanilla Icing

This a great basic vanilla cake (that no one will even know is vegan!) that can be used for birthdays and other special occasions.. or even just because! It's very easy to make and tastes similar to a yellow cake box mix.. and although this recipe is not "healthy" for you, it's definitely a "healthier" version. The recipe is so versatile it can be made into a basic cake, a layer cake, cupcakes, or even a sweet tasty dessert bread, with or without icing (it's plenty sweet and complete on its own without the icing! This awesome recipe was taken from "Hot Damn and Hell Yeah- The Dirty South Cookbook". Whatever you choose to do with it, enjoy!

Ingredients:

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 ½ cup sugar
½ cup margarine or earth balance
4 egg substitutes (I used 4 chia eggs- 4 tablespoons of chia seeds blended, mixed with 12 tablespoons of water and allowed to sit until thickened)
1 cup of non-dairy milk
1 teaspoon vanilla extract
⅛ teaspoon almond extract (optional)

1 batch of simple icing (with vanilla extract for flavor)

Directions:

Preheat oven to 350 degrees F. Grease and flour a one large cake pan, 2 small rounds, a couple of bread pans, or line 18 cupcake tins.

Sift flour, baking powder and salt in a bowl and set aside. In a separate bowl mix sugar and margarine together until light and fluffy. Add egg substitutes and keep mixing. Add flour mixture and milk and keep mixing. Next add vanilla and almond extract if using and once well combined, pour batter into prepared pan(s).

Bake for 35-40 minutes until a toothpick or knife can be inserted into the center and come out clean. Allow to cool before removing from pans and/or adding frosting.
