Tasty quinoa can be used to stuff zucchini boats, fill up collard wraps, or both! This recipe is made to create both, and leftovers can be used for the next day's lunch :) Enjoy!
Ingredients:
2-3 cups of quinoa
4 zucchinis
olive oil
1 onion, chopped
1 tablespoon of minced garlic
1 can of tomatoes
Spices like turmeric, oregano, pepper, salt, 21 seasoning salute- anything you want to taste
bunch of fresh collard greens, full leaves
Directions:
Cook quinoa on stovetop in a pot of water.
Cut zucchini in half lengthwise and scoop out the insides. Steam emptied zucchini "boats" (the remaining portion of the long zucchinis after the insides are scooped out) and large collard leaves in a steamer basket for just a few minutes to soften a bit. While veggies and quinoa is cooking, combine chopped onion, garlic, tomatoes, and zucchini "guts" together in a large pan. Once quinoa is done cooking, add together in the pan and mix with other ingredients. Add spices to your taste and mix well. Allow to cook on low with all the ingredients together for about 10 minutes, mixing thoroughly.
Remove steamed veggies and place on a plate. When quinoa mixture is done, fill up and "stuff" the zucchini boats and put a couple spoonfuls in the middle of each collard leaf and wrap up like a burrito.
