Black bean pasta with broccoli, sun-dried tomatoes, and nooch garlic sauce

This is one of those recipes you make when you're too exhausted or just don't have the time to make a full out meal, but don't mind putting a little bit of effort to make sure the meal is complete in itself (and super tasty). This easy meal can be made in about 15 minutes. This is much more wholesome, healthy and packed with more protein and flavor than a typical pasta meal. Black bean pasta in itself contains a whopping 25 g of protein per serving!




Ingredients:

1 package of black bean pasta
1 head of organic broccoli, cut into florets
olive oil
1 tablespoon of minced garlic
1 onion, chopped
mixed seasoning such as 21 season salute from Trader Joe's
dash of turmeric
dash of sea salt
¾ cup + of nutritional yeast
1 cup of vegetable broth
½ cup of sun-dried tomatoes, chopped

Directions:

Boil black bean pasta according to package directions. Strain and cool.

Steam broccoli florets in a steamer basket in a pot of ½ inch of water until soft.

Pour ½ inch of oil into a frying pan and sauté onion with garlic until golden. Add seasoning, salt and turmeric and mix well. Add vegetable broth and nutritional yeast. Add more nutritional yeast until desired thickness of sauce is achieved. Add sun-dried tomatoes. Mix together until well combined.

Toss broccoli with sauce mixture, and serve over black bean pasta. Enjoy!
