Peach Cobbler

This delicious vegan peach cobbler is sweet, tasty, and since peaches are almost in season this will be the PERFECT recipe for local peaches... yum! The cobbler is supposed to feed 6-8 but don't be ashamed if you eat most of it yourself. It's not technically a "health" food, but by using healthier alternatives this recipe is definitely better than most other pie recipes. This recipe was modified from Alicia Simpson's "Quick and Easy Vegan Comfort Food". Enjoy!





Crust ingredients:

2 ½ cups of whole wheat flour
¾ teaspoon of sea salt
⅔ cup plus 1 tablespoon of vegan butter (or coconut oil as a healthier alternative)
7 tablespoons of cold water

Peach filling ingredients:

30 oz. of frozen sliced peaches (thawed)
½ cup of organic sugar
½ cup of organic brown sugar
¼ teaspoon of cinnamon
¼ teaspoon of grated nutmeg
1 ½ teaspoons of arrowroot powder or cornstarch


Directions:

Preheat oven to 350 degrees F. Blend the salt and flour in a food processor with a metal blade. Add the butter or coconut oil and blend until it resembles a grainy flour. Add 1 tablespoon of cold water at a time until a ball of dough forms.

Separate the dough into two balls, one slightly larger than the other. Add a bit of extra flour if too oily. On a floured surface, roll out each dough ball until flat. Use the larger piece to line the bottom of a greased 8x8 (or similarly sized) baking dish. Spread out so it covers the bottom and sides of the dish.


In a medium bowl, combine peaches, sugars, cinnamon and nutmeg and mix thoroughly with hands or a spoon. Sprinkle in the arrowroot powder and mix until dissolved.



Pour the peaches into the baking dish over the bottom crust. Use the top piece as the top crust as is, or you can get creative and place strips of dough over the peaches horizontally and vertically (as shown in picture). Lightly spray top with coconut oil, and bake for 45 minutes-1 hour until the crust is golden brown. Allow to cool and serve alone or with some vegan vanilla ice cream (My favorites are Soy Creamy from Trader Joe's, or Coconut Bliss brand, found at most supermarkets that have vegan/healthy selections).
