This hearty and low calorie soup recipe I retrieved from Damn Delicious is filling and nutritious. My favorite thing about it is how EASY it is to make.. literally just throw it all in the slow-cooker, go to work, and dinner is all ready to go by the time you get home!
Ingredients:
1 cup of uncooked quinoa
2 cans of diced tomatoes (or fresh)
1 can of northern beans (drained and rinsed)
1 onion, diced
3 garlic cloves, minced
½ teaspoon of dried oregano
½ teaspoon of dried basil
¼ teaspoon of dried rosemary
¼ teaspoon of dried thyme
2 bay leaves
4 cups of vegetable broth
2 cups of water
salt and pepper to taste
1 pound of kale or collard greens coarsely chopped
Directions:
Put everything in the slow cooker and cook on low heat for 8 hours or high heat for 4. (If you don't have all the herbs/seasonings don't worry- I left some out and it still tasted wonderful). Stir when possible.
