Homemade pup-cakes (healthy cupcakes for DOGS!)

These cupcakes are especially for dogs, however they are healthy and tasty enough that humans could actually eat them as well if they wanted to. These cakes are plant based, healthy for your dog, and can provide a special treat for special occasions or just for good behavior. This recipe was taken from One Green Planet, but I got creative and added peanut butter "icing" and a dog biscuit topping to make them extra classy.




The recipe makes one doggy cake (of a pretty decent size) but can also make cupcakes. I doubled the recipe and made 36 mini cupcakes.



Ingredients:

1 cup of flour of choice. Some dogs can't handle gluten well, so a mix of oat flour and brown rice flour works really well, but for those that can, whole wheat flour is fine. Use whatever is best for your dog's dietary needs.

2 cups total of fruits/veggies of choice. 
You can use a ½ cup each (or any combination of amounts) of the following, which will give your cake it's main flavor, so pick which ones your dog loves best:
- shredded carrots or sweet potatoes
- mashed banana
- unsweetened applesauce or chopped apples
- pumpkin puree

¼ cup of ground flax and/or chia seeds
(helps bind the cake together without the use of egg, also healthy fats for dogs)

¼ cup of all natural peanut butter 
(no salt, sugar, or additives)

1 teaspoon of baking soda

1 tablespoon of honey or maple syrup 
(dogs don't mind if their treats are sweet like we do, so a sweetener is optional, but if you add any, stick to these instead of sugar which isn't good for dogs)

¼ teaspoon of cinnamon
(contains antioxidants and aids in digestion)

¼-½ cup of non-dairy milk OR water
Unsweetened soy, rice, or almond milk works well to help add extra vitamins & minerals to the cake and combine everything together so use the amount that works best for the consistency of your batter.  (Do not use almond milk if your dog is allergic to tree nuts, as some are)

Extra peanut butter for icing/topping (optional)

Dog biscuits, broken in half as toppers (optional)


Directions:

Combine everything together in a blender or food processor starting with the wet ingredients and adding in the dry. Scrape into a cake pan sprayed with oil to make a dog cake, or into a sprayed muffin tin for several pup-cakes.



Bake for 30 minutes at 350 degrees F.

Once cooled, use a butter knife to spread peanut butter on the tops of the cake or cupcakes like you would icing. Add a half a biscuit into the tops as extra decoration.
