Sorry I'm a little late.. you may have thought I was done with the pumpkin kick but here's another one to add. This Chocolate Covered Katie recipe was excellent for Thanksgiving (it even mind-blew the non-vegans who ate it!) but it can easily be made for this holiday season as family gather during this wonderful time of the year. Give yourself a heads up that it does need to be refrigerated to set properly for about 5 hours (I cheated and put it in the freezer for 2!) either or... it's tasty, filling and wonderful. And it's actually kinda healthy (or should I just say.. less unhealthy for you..). If you're not sick of pumpkin yet this season leave a little room for this tasty treat.... It'll even knock the socks off the vegan haters who don't believe you can make anything tasty without butter, milk and eggs.
Ingredients for the crust
1 ½ cups of whole wheat flour
1 teaspoon of salt
⅓ cup of organic sugar
½ cup of coconut oil
2-4 tablespoons of water
Ingredients for the filling
1 can of pumpkin puree (or 15 oz of homemade pumpkin puree)
1 can of coconut cream
¼ cup rolled oats
2 tablespoons of ground flax seeds
1/3 cup of brown sugar
pinch of stevia, or 2 more tablespoons of sugar
2 teaspoons of cinnamon
1teaspoon of pumpkin pie spice
½ teaspoon of salt
1 tablespoon of pure vanilla extract
Directions for the crust
Preheat oven to 200 degrees. Combine all of ingredients together in a food processor or mix by hand in a mixing bowl. Add enough water to hold it together but not too wet and gummy. Press evenly into a 10 inch pie pan, or along the bottom of another type of baking dish if you do not have one. Put in oven, and change temperature to 350 to allow the crust to heat up with the oven. Bake for 15 minutes.
Directions for the filling
While your crust is baking you can get a head start on the filling. Blend all ingredients together in a food processor. Pour into pie crust after it's done and bake for another 27 minutes. Let it cool, and refrigerate for at least 5 hours before serving to allow it to thicken.
