These protein packed, garlicy, tasty, creamy mashed potatoes are sure to steal the show at your Thanksgiving meal. They make an excellent side, but contain enough protein to be a meal on their own if you wanted to top them with some fresh cooked veggies and other tasty toppings. This recipe was taken from Oh She Glows and I found it on this awesome page with FOURTY-TWO crazily insanely delicious vegan Thanksgiving recipes. I love these mashed potatoes because they were easy to make, and just for the two of us provided a ton of leftovers. There is plenty to go around and could easily feed a group of 8 of people at your holiday dinner. Enjoy!
Ingredients:
10-12 small potatoes or about 6 large ones
2 cans of navy beans (navy beans recommended because of their white color but you can use any kind.. we used half navy and half kidney for some pink mashed taters :) )
¼ cup of Earth balance (optional, but recommended if you love buttery mashed potatoes! Coconut oil could also be used to make them moist if you'd like a healthier option)
2 tablespoons of unsweetened almond milk (or other non-dairy milk)
4-5 garlic cloves
1 tablespoon of sea salt
¼ teaspoon of paprika
black pepper to taste
other seasonings or herbs of your choice (try dill!)
Directions:
Wash potatoes and slice into large chunks. I leave the skin on (extra fiber and does not affect taste of potatoes.. they're still smooth and tasty! But you can peel them if you desire). Boil in large pot with water for about a half hour until soft enough to stab with fork easily. Once they're done cooking, drain and put in large mixing bowl.
Blend garlic cloves, drained beans, salt and paprika in a food processor until blended smooth.
Mash potatoes with a masher. Add Earth Balance (or coconut oil) and milk and keep mashing. Add bean mixture and mix together well. Add black pepper and other seasonings or herbs of your choice. We used some finely chopped dill and it tasted amazing. You may also add additional salt to taste.
Enjoy! Serves about 8 people, each serving contains 11 grams of protein.
