Ever crave some cookie dough and wish you could just eat it without the guilt? Here is a vegan version that's actually kinda healthy for you and totally safe to eat raw.. so you can enjoy eating it as a snack guilt-free! This one is oat-based and tasty... but if you prefer something with a bit more protein, check out my chick-pea cookie dough recipe. Another super similar recipe I've posted is for tasty cookie dough bites with almonds! These are several variations of a similar treat, so try them all and let me know which you like best! (can you tell I really enjoy making and eating raw vegan cookie dough?!)

1 cup rolled oats
1/4 cup tapioca flour/starch to thicken, or more oats
4 tablespoons maple syrup
3 tablespoons coconut oil
1 tablespoon vanilla
3 tablespoons peanut or almond butter
handful of chocolate chips

Blend everything in a food processor, but add the chocolate chips last and mix in by hand. Enjoy by the spoonful!
