Faux Chick'n Salad

Need an easy protein packed lunch? This salad is easy to whip up and a great cruelty-free alternative to the real thing! I've gotten super picky people to eat and enjoy this salad :) Makes a great dish for potlucks and picnics!




Ingredients:

Homemade seitan cutlets (4)
1 cup vegan mayo
1 tablespoons apple cider vinegar
1 tablespoon mustard
salt and pepper to taste
optional- chopped celery, onions, and/or green onions

Instructions:

Take your seitan cutlets and blend on high in a food processor until broken up into small chunks like shredded chicken.

Mix in a large bowl with remaining ingredients. Enjoy on top of a veggie salad, in a sandwich, or by the spoonful! Delicious.
