Watermelon Smoothies

I recently was introduced to the concept of throwing some fresh or frozen watermelon chunks into a smoothie to get the most incredible outcome---- sweet, pink, and fresh tasting. Watermelons are in season right now and provide a great method for re-hydration when you need it.. plus instant candy-sweetness without any added sugar or sweeteners necessary. I've always preferred to eat watermelon than "drink" it, but after I tried these recipes I was entirely blown away. If you want a healthy alternative to that bright pink strawberry milkshake you used to enjoy as a kid, this is it! Try these three milkshake style smoothies that are not only wholesome and good for you, but the perfect desserts your sweet tooth is craving! I always feel energized, refreshed and great after drinking one of these, as opposed to the tired irritable feeling you may get after eating a junky snack.

All these recipes were taken from "365 Vegan Smoothies" by Kathy Patalsky (one of my favorite smoothie books!). Each recipe makes 2 servings. My favorite is the banana split smoothie which is amazing with or without the toppings!

Watermelon "milk" shake

Ingredients:
1 1/2 cups of frozen or fresh watermelon chunks
1 1/2 frozen bananas
3/4-1 cup vanilla soy milk (sub w/ any non-dairy milk)

Blend everything together until frosty smooth!


Skinny pink vanilla shake

Ingredients:
1/2 cup vanilla soy milk (sub w/ any non-dairy milk)
1 heaping serving of vanilla protein powder
1 cup frozen or fresh watermelon chunks
1 frozen banana
1/4 teaspoon cinammon

Blend everything together until smooth!


Banana split smoothie

Smoothie base ingredients:
1/2 cup soy milk (or sub w/ non-dairy milk)
1 tablespoon almond butter
1 frozen banana
1/2 cup frozen or fresh watermelon chunks
optional- 1 tablespoon raw cacao powder for chocolate flavor

Toppings:
1/2 cup sliced banana
2 squeezes of chocolate syrup
1 teaspoon chopped walnuts
2 tablespoons coconut cream whipped topping
pinch of cinammon
1 cherry

Directions:

Blend all base ingredients together until smooth. Serve in a bowl or glass and top with toppings of your choice. Enjoy!
