Do you like chili, spicy food, mac n cheese, easy recipes and beer? If so, then this recipe is definitely for you! It's SO good! I just couldn't stop eating this, it is the ultimate comfort food. Taken right out of The Thug Kitchen 101 Fast as F*ck, this literally involves throwing a bunch of stuff into a pot and is encouraged to be done single handedly while beating your buddies at video games.
Ingredients:
1 tablespoon olive oil
1 yellow onion, chopped
1 carrot chopped
1 red bell pepper, chopped
1 jalapeƱo, seeded and minced
2 tablespoons chili powder
2 teaspoons cumin
2 teaspoons smoked paprika
if you want additional spice- add cayenne pepper to taste
1/4 teaspoon salt (or more to taste)
2 tablespoons tomato paste
1 can tomato sauce
1 cup of beer, any kind you'd drink with chili (I used corona, it was delicious!)
3 cups vegetable broth or water
3 cups macaroni or other small pasta (use rice or quinoa pasta for GF)
3 cups mixed beans such as black and kidney or pinto (2 cans)
1/4 cup nutritional yeast, or more to taste
1 tablespoon pure maple syrup
1 tablespoon lime juice
optional toppings: sliced jalapeƱos, cilantro, red onion, and/or avocado
Directions:
In a large, deep skillet or large pot, heat oil over medium heat. Add onion and cook until soft and golden, about 5 minutes. Add the carrot and peppers and cook for another 2 minutes. Fold in all the spices, tomato paste, and cook for another minute or so.
Add tomato sauce, beer, broth/water and bring to a simmer. Stir in the pasta and follow package directions for cooking time. Cook until tender. When pasta is done, add the beans, nutritional yeast, maple syrup and lime juice. Mix well and taste test. Adjust seasonings or ingredients to your liking, and then serve into bowls and enjoy! Feeds 4-6 people.
