Tahini Coffee

This easy to make "raw" coffee is caffeine free, and is full of calcium, protein, and iron. It's a great alternative for coffee for people that don't really like coffee or can't have caffeine, and it can be served at any temperature (ice it, heat it, or leave it be). I enjoy it at room temperature (it's easier and I don't have to heat it up!) and love grabbing this to go so I can feel like that average person that drinks a coffee on the go even though I've never been a coffee drinker and can't have caffeine. It's taste and refreshing and takes about 2 minutes to make! This recipe was taken from a great book I have, "Quick and Easy Vegan Comfort Food" by Alicia C. Simpson.



Ingredients (for one 8-oz serving)

1 cup plain soy, oat or almond milk
1 tablespoon raw tahini
1 tablespoon unsulfured blackstrap molasses
dash of freshly grated nutmeg (optional)

Directions:

In a coffee mug, whisk everything together well so the sticky ingredients aren't stuck to the bottom and enjoy!

To enjoy hot, whisk together in a small saucepan over medium heat. For an iced version, pour over ice.
