The first time I ate at Curia on the Drag, an awesome all vegan restaurant here in Gainesville, I fell in love with their BBQ jackfruit quesadillas! They were SO good, and like most things I enjoy when eating out somewhere, I try to replicate the recipe at home! This recipe was relatively easy to make, and although not exactly like Curia's, I used my own Jackfruit recipe and Cheese to throw together these tasty and filling quesadillas inspired by theirs. Give them a try!
Ingredients (serves 2):
Can of young green jackfruit
Vegan BBQ sauce (I love Trader Joe's!)
Vegan Cheese that melts and stretches, use store-bought non-dairy cheese like Daiya, or you can make your own with nuts!
4 Tortillas
Directions:
Open can of jackfruit and drain jackfruit from the brine. Use a fork to shred apart the chunks of jackfruit.
Heat a frying pan over medium heat on the stove, and add your jackfruit shreds and enough BBQ sauce to fully coat them. Stir around over the heat and cook for about 10 minutes or until fully saturated with the flavors.
In another pan or skillet, use an oil spray or non-dairy butter to coat the bottom, and put down one tortilla. Add ½ of the jackfruit on top of the tortilla and spread out evenly. Cover with a layer of cheese, and then the second tortilla. Cook on low-medium heat until cheese gets melty and the bottom tortilla warms up but doesn't burn. Flip quesadilla over and warm until other side is cooked.
Transfer finished quesadilla onto plate and repeat process to make a second one. Once both are done, slice into 4 pieces and enjoy! These taste wonderful topped with guacamole, salsa and sour cream!
