Soul-Soothing African Peanut Stew

This incredibly satisfying stew recipe is from one of my favorite cookbooks: "The Oh She Glows Cookbook" by Angela Liddon. This unique dish is wholesome, hearty, filling, and delicious! Easy to throw together in a half hour, this savory peanut flavored stew provides a full meal in itself. Enjoy!




Ingredients:

1 teaspoon extra virgin olive oil

1 medium sweet onion, chopped

3 minced cloves of garlic

1 red bell pepper chopped

1 jalapeño or other type of spicy pepper seeded and diced, optional

1 sweet potato chopped

1 can diced tomatoes (with juices) or a couple of fresh tomatoes

sea salt and ground black pepper to taste

⅓ cup natural peanut butter (with no added ingredients)

4 cups vegetable broth, more if needed for a thinner desired consistency

1 ½ teaspoons chili powder

¼ teaspoon cayenne pepper, optional

1 can chickpeas, drained and rinsed

2 handfuls of baby spinach, kale or edible sweet potato leaves, washed and chopped

fresh cilantro or parsley, optional for garnish/serving

roasted peanuts, optional for garnish/serving


Directions:

1. In a large saucepan, heat oil over medium heat and sauté the onion and garlic until translucent (about 5 minutes).

2. Add peppers, sweet potato and tomatoes. Raise heat to med-high and simmer for 5 additional minutes. Season with salt and pepper.

3. Whisk together the peanut butter and 1 cup of the broth until smooth and no clumps remain. Add mixture into cooking veggies along with remaining broth, chili powder and cayenne if using.

4. Cover with lid and reduce heat to med-low. Simmer for 10-20 minutes until sweet potato is tender.

5. Stir in chickpeas and greens and cook until greens are wilted. Add salt and pepper to taste.

6. Serve into bowls and garnish with herbs and peanuts. Enjoy!
