Ingredients:
6 oz coconut water (or you can use almond milk with a little coconut oil and/or flakes)
2 cups raw cashews
1 large garlic clove
¼ of a ripe avocado
2 teaspoons curry powder
1 teaspoon chili powder or paste
¼ teaspoon cayenne
¼ sea salt
(adjust seasonings to taste)
3-4 medium zucchinis
Optional add-ins: chic peas, chopped veggies, etc.
Directions:
Use a spiralizer to spiralize your zucchinis, or use a vegetable peeler to make long "ribbon-like" noodles. Put your zucchini noodles in a bowl.
Blend the other ingredients together in a food processor until smooth. Toss with zucchini noodles and any optional add-ins (I used chic peas) and enjoy! Serves 6 (or 2-3 hungry people)
