raw pancakes

Yes. This recipe is for a "raw" pancake. Who knew there could be such thing?



I love this because:

1. it's quick and easy to make. like literally 2 minutes. anyone craving a pancake can make time for this in the morning.
2. I don't even need to turn on my stovetop (and risk leaving it on like I often do...)
3. it's pure, wholesome, and has no added crap. raw is a lifestyle of wholeness and goodness (and convenience!)
4. raw is easier to digest, doesn't break down any vital nutrients in your ingredients by heating up, AND it's delicious (more than you would think...)
5. conveniently gluten free, I think most people should have no issue enjoying this.

Plain on it's own, it'll need some syrup or nectar drizzled over it and some tasty toppings to bring it up to speed, however a forkful of this "raw" cake with your toppings may fool you for a real pancake, minus the sickling sweet added sugars. I pulled this recipe from one of my new gems of a book... "Raw in Ten Minutes" by Bryan Au (everything in it literally can be made in less than 10 minutes and under $10). I hope you enjoy this.. the recipe makes about 2 cakes, and personally, 1 with toppings was enough to fill me up since it's pure, dense protein.


Ingredients:

1 cup flaxseeds
4 tablespoons olive oil or coconut oil (in liquid form)
2 tablespoons water

Topping ideas:

maple syrup or agave
chopped fruits such as banana, strawberries, etc.
coconut flakes
cacao nibs
hemp seeds
chia seeds

Directions:

Put your flaxseeds into your blender or food processor until processed into a fine powder. Add oil and water and blend until you get a smooth, well incorporated dough.

Split your dough in half into 2 balls. Flatten each ball on a plate into a pancake. Drizzle with syrup or nectar and add toppings of your choice. Enjoy as a quick breakfast on the go and a pure and wholesome fuel to get you through the day!
