Straight from my "Fresh, The Ultimate Live-Food Cookbook," this easy recipe makes a mushy, raw, vegan burger that can be stacked on a raw flatbread cracker and topped high with fresh veggies, stuffed into mushrooms or peppers, served rolled up within a leaf of lettuce, cabbage or kale, used as a "dip", or smushed into a wrap or between 2 slices of sprouted whole wheat bread. It only takes a few minutes to make. You can get creative with this in so many ways.. the main point being that it's delicious, full of plant based protein, and extremely quick and convenient to make. Here it is.. smushed in there somewhere on a seed cracker, topped with sprouts, avocados and tomatoes. So good!
Ingredients:
1 cup walnuts
¼ cup ground flaxseeds
3 carrots, chopped
1 medium red onion, chopped (use less if you're sensitive to raw onions)
2 cloves garlic
½ lime, juiced
1 tbsp onion powder
1 tsp paprika
1 tsp sea salt
Directions:
Blend everything together until you have a nice blended mixture! Scrape down sides of blender/food processor half way through if necessary. Serve however you'd like and accompany with fresh veggies such as tomatoes, greens, sprouts, or avocado. Below are some yummy stuffed mushrooms I made tonight! Literally pop out the stems and stuff with the mixture. The mix will stay fresh in a covered container in the fridge for about a week.
