Being on vacation and eating at tons of organic, wholesome, vegan restaurants has inspired me to get back on my health kick and start making daily smoothies again. I used to have one every morning, but then switched to a protein powder shake that was faster and easier.. but I've realized that although I'm getting a ton of protein I'm missing some of the nutrients and feel-good properties that fruits, veggies, nuts, and superfood powders can add to your day when you start off strong by having one first thing in the morning. I'm going to start to rotate between protein drinks and smoothies <3
This morning I had to make one based on ingredients we had on hand (didn't have a big variety of frozen fruit, we are out of cashews and other types of nuts besides almonds, and was feeling inspired to throw some random stuff together that would give me natural source of protein (but NOT taste gross-- which often happens when I throw random stuff together) so I started with a strawberry base and came up with this incredible energy boost that still has me going strong into the afternoon (as someone that can't have caffeine, I look for energy boosters in other natural ingredients). The key to this one is some nuts, and maca powder. I forgot we had some maca powder in the back of the cupboard that goes unused, but I needed something to get me feeling alive today.. first day back at work after a long 8 day vacation and break from the world. The maca did it. Maca powder comes from a root (in the same family as broccoli) and its benefits include immune booster, increased energy and stamina, better memory, more focus, improved sexual function and increased fertility. I love it because it also helps the body adapt to stressors in your every day life such as emotional/mental stress or illness (that normally could just tear and break you down completely). It helps restore proper hormone balance and may make you feel alive, energetic and a sense of happiness and well being from increased endorphins. PLUS you get some protein, calcium, magnesium, iron and extra fiber in your smoothie. Definitely my kind of superfood! This morning I was feeling great!
So give this one a go-- it surprisingly tastes pretty good! Simple and nutty. Enjoy!
Mix the following together in a blender:
2 cups frozen strawberries
handful of almonds
2 tablespoons dried (unsweetened) coconut flakes
1 tablespoon (or more) of maca powder
fill with coconut milk until you reach the top of your strawberries
add a teaspoon of vanilla if the milk is unsweetened/unflavored
Blend until smooth, and pour into a glass, or use less coconut milk to make it extra thick and enjoy as a smoothie bowl.
Top with hemp seeds <3
