This delicious soup is pretty easy and the ingredients can be modified/changed to taste. Enjoy!
Ingredients:
1 onion
1 tablespoon minced garlic
olive oil
3 cups cooked OR 2 cans of black beans (drained and rinsed)
4-5 cups vegetable broth
Large can of tomatoes (including the juice)
Handful of kale or other green of your choice
cumin
oregano
cayenne pepper
salt
fresh cilantro (for garnishment)
Directions:
Chop up and sauté your onion with the garlic in the bottom of a medium-large pot in a little olive oil for a few minutes or until onion starts to turn golden. Add your black beans, broth, and can of tomatoes (with juice). Add all of the spices to taste (start with ½-1 teaspoon of each and add more if needed). Allow to cook for 10-15 minutes, stirring occasionally. Chop up your greens and add them too. Use a submersion blender to carefully blend the soup into a thick, smooth soupy uniform mixture. Allow to simmer until flavors blend together even more (5-10 minutes). Allow to cool and enjoy!
