Spirolina "green" ice cream (vegan)

Here is a dairy-free and healthy alternative to ice cream! Whip some soft serve up in minutes, or stick in the freezer for a bit to get a nice hard ice cream you can scoop out later on. Spirolina gives this dessert a fun green color that is perfect for St. Patty's Day, or is great if you like a more unusual hue to your treats. Recipe was modified from The Healthie Cook Life.



Ingredients:


about 4 frozen bananas

½ can of coconut cream (or an additional 3 bananas)

about 2 tablespoons of maple syrup/agave/nectar/brown rice syrup (more or less to taste)

1-2 teaspoons spirolina depending on how "green" you want your ice cream!

* optional, 1-2 teaspoons of peppermint essential oil, OR fresh mint (I used a handful of fresh mint, washed and chopped)

toppings of your choice (I used cacao nibs!)


Directions:

Blend everything except your toppings in a blender until smooth. The coconut cream should help the blender blend if you're having trouble add a little more.

Serve as is (soft) or freeze in a freezer safe covered container for at least a few hours.  Scoop out when ready to serve and top with toppings!
