This is a quick way to pickle/marinate onions to use as a topping for burgers or sandwiches, addition to salad, or even to eat alone! I love these things. They can be ready in as quick as an hour or you can let them marinade for several days to get the flavor soaked in real good. Very simple to make, and gives a sweet kick to your typical onion (and also pulls out some of the acidic punch that can torture someone with bad acid reflux). Normally I can't handle many onions at once but with these, I can enjoy a full onion no problem! I pulled this recipe from bonappetit.com.
Ingredients:
½ cup apple cider vinegar
1 tablespoon sugar
1 ½ tablespoons sea salt
1 cup filtered water
1 red onion, thinly sliced
Directions:
Whisk together vinegar, sugar, salt and water until sugar and salt dissolve. Combine in a jar with sliced onions. Add more water if the onions are not covered. Let sit at room temperature for about an hour, then stick in the fridge until use. If you plan to use all the onions at once, drain liquid and serve onions without it, if you plan to use a little at a time, use a strained serving spoon or a fork to pull out a small amount at a time and leave the rest to continue to marinate in the liquid until you use them.
