Nourishing Cauliflower Salad w/ Nuts, Seeds, and a Green Goddess Dressing

This gem of a recipe is from one of my favorite sites... One Green Planet. It's pretty easy to make but has a few steps involved. The original recipe calls for a delicious avocado dressing but since we don't have avocados I had to improvise and whipped out a "green goddess dressing" recipe from one of my cookbooks "How it all Vegan" by Tanya Barnard and Sarah Kramer. This recipe wouldn't be possible without good friends-- as a fellow vegan friend shared this delicious recipe in a post about great cleansing recipes to try for the new year and a work friend got me the awesome cookbook. Yay for friends and yay for eating healthy for the new year! This is super wholesome, healthy-- but also packed with flavor. You can pair any kind of flavorful or creamy dressing with this salad if you want to switch it up.

Cauliflower salad 

Ingredients:
1 head of cauliflower
several handfuls of kale & spinach and other greens of choice (I added dino greens/radish tops)
bunch of fresh coriander (optional)

Directions:
Blend cauliflower in food processor (or chop very very finely) until it resembles cous cous. Next blend up or chop your greens & herbs until they're in tiny bits too. Mix together in a large bowl.


Nut & Seeds

Ingredients:
½ cup slivered almonds
½ cup sunflower seeds
⅓ cup flax seeds
1 tablespoon cumin seeds, or cumin powder
½ teaspoon salt
1 tablespoon melted coconut oil

Directions:
Combine nuts, seeds, seasonings and melted oil in a oven-safe dish and bake at 175 degrees F for 10-15 minutes, mixing halfway through. Bakes best spread thin on a baking sheet, but I just baked in a bowl for a little longer, mixing well.

Green Goddess Dressing:

Ingredients:
½ lb. tofu (soft is best but any consistency is fine-- I used firm without issue)
¼ cup flax or olive oil
½ tbsp chives
¼ cup fresh parsley
2 tablespoons vinegar
½ small onion
1-3 garlic cloves
⅛ teaspoon pepper
½ teaspoon salt

Directions:
Blend everything together in food processor until smooth!



Once everything is done, you can either mix it all together, or mix the salad and dressing and top with nuts and seeds. You can eat it any way you'd like-- any way you do it is delicious! Enjoy.
