I saw something floating around on social media about "sweet potato toast".. and really didn't grasp the idea until I tried it for myself. Basically- think gluten free, healthy, tasty, and a unique swap out for bread when making loaded toast as a breakfast or a snack. Your toast can be topped with avocado, nut butters and seeds, jams, fruit, veggies, sprouts, etc.... but instead of eating wheat you can eat a healthy vegetable that is camouflaged so well when loaded up with toppings you may not even notice! The hint of sweet potato I find to be delicious, since sweet potatoes are one of my favorite foods! They go well with toppings ranging in tastes from creamy, to salty, to sweet to nutty, to.. whatever! The best part about sweet potato toast- you just make it in the toaster like regular toast! Give this a try- this hot new meal trend is totally worth jumping on the band wagon for!
Ingredients:
Sweet potato
toppings, such as:
coconut oil
vegan butter spread
dairy free cream cheese
soft avocado or guac
hummus
jelly or jam
nut butter (peanut, almond, cashew, sunflower)
nuts
seeds
sprouts
veggies
fruit slices (such as banana, strawberries, etc.)
Get creative!
Directions:
Cut sweet potato carefully into ¼ inch slices. Pop the slices in your toaster like you would with regular bread but toast twice (once it pops up, push it back down to cook a second time). Adjust toaster settings if necessary. Slices should be toasted just right, so the potato is soft and slightly crisp. Add spreads and toppings as you desire.
