This recipe is DELICIOUS. It's not as hard as it seems like it would be, but does take some down time. Basically you need to prepare a day ahead of time. On the plus side there is no ice cream maker required.. your freezer, fridge and a food processor or blender are all you'll need to form this delicious ice cream! Dairy free with a sweet and delicious flavor. You can even get creative and add some chocolate chips, vanilla extract or cacao to create other flavors!
Ingredients:
1 ½ avocados
1 teaspoon of lemon juice
1 can of coconut cream
⅓ cup of organic rice syrup, agave or maple syrup
Instructions:
Place the can of coconut milk/cream in the fridge overnight.
Cut the avocados in half, remove the pit and scoop out the flesh into a blender/food processor. Add lemon juice and blend until it's smooth and creamy.
Open the can of coconut cream and whip in a mixer if it isn't thick or creamy enough. (You can use coconut milk by opening the can upside down and scooping out the cream but leaving the water). Once thick enough, add to avocado mixture with your sweetener and mix well.
Put the ice cream mixture into a freezer safe dish, and freeze for at least 4 hours. You may have to let it sit at room temperature for a minute or so to soften before eating. Enjoy!
