This tasty side dish is packed with flavors and can be a good addition to any Mexican style meal.
Ingredients:
1 cup of uncooked rice
1 onion, chopped
1 green bell pepper, chopped
2 tablespoons of vegetable oil
1 stalk of celery, chopped
1 can of chopped tomatoes
1 teaspoon of paprika
½ teaspoon of cumin
⅛ teaspoon of black pepper
⅛ teaspoon of salt
½ teaspoon of oregano
½ teaspoon of cayenne pepper
Directions:
Cook rice and set aside.
Heat oil in skillet over medium heat and sauté onion until translucent. Add pepper, celery and spices and cook for another 5 minutes.
Add can of tomatoes and cooked rice. Simmer until some of the liquids evaporate, and stir occasional to blend all the flavors. Adjust spices to your liking.
