Black Bean & Sweet Potato Burritos

The filling for these burritos are made of a different kind of flavor. I'm actually a little obsessed with them. They're easy to make and consist of a mix of sweet and spicy flavors which will ensure your mouth will never forget their taste. These are from an awesome little vegan cookbook called "Hot Damn And Hell Yeah: The Dirty South Cookbook" that I found at the library. I love it a lot!



Ingredients:

Tortillas (my favorite are habanero tortillas from Trader Joe's)
1 tablespoon of vegetable oil
½ cup of chopped onion
1 clove of chopped garlic
3 tablespoons of peanut butter
1 teaspoon of cumin
½ teaspoon of cinnamon
¼ teaspoon of cayenne pepper (or more if you love it spicy!)
3 cups of sweet potatoes, cooked and mashed (microwave, bake, or steam them)
1 cup of black beans, cooked/canned and drained

Toppings:

salsa
sour cream
½ cup chopped green onions
2 tablespoons of chopped cilantro

Directions:

Heat oil in a large skillet over medium heat and saute the garlic and onion for a few minutes until the onion is translucent.

Stir in peanut butter, sweet potatoes, and black beans. Use a masher if it makes it easier. Add in the spices and mix well, cooking for a few minutes until heated through.

Serve in tortillas and top with salsa, sour cream, green onions and cilantro. Enjoy!



Try with a side of spanish rice.
