Rosemary and garlic sweet potatoes

This one is a quick and easy side dish that can be made in the microwave, but don't let the convenience fool you- it's packed with flavors and will wow your family or guests!





Ingredients:

2 small sweet potatoes or 1 medium sweet potato per person

olive, coconut, or grapeseed oil

garlic powder

fresh or dried rosemary, chopped, (about a punch per serving)


Directions:

Chop up potatoes into ½ inch slices. Place on a microwaveable plate and drizzle with oil. Sprinkle on garlic in a thin layer so all the potatoes are well coated in it, and sprinkle on rosemary. Cover, and cook on potato setting or until moist and soft enough to cut with a knife.

Alternatively, the potatoes can be baked in the oven at 400 degrees F until same consistency is reached but they will have more of a traditional "roasted" texture.
